For the Hash Brown-

  • 4 medium potatoes (peeled and grated)

  • 1 medium onion ( thinly sliced)

  • 1/2 tsp onion powder

  • 1 tsp black pepper powder

  • 1/2 tsp salt

  • 1/4 cup shredded cheddar cheese

  • 2 tbsp oil

  • Few chunks of butter

For the Baked Eggs-

  • 5 eggs

  • Salt and pepper for seasoning

  1. Preheat the oven to 180 degrees.

  2. Wash the potatoes. Peel and grate them using a grater.

  3. Take a kitchen towel and add the grated potatoes and the sliced onion to it and squeeze out the moisture. The more you get rid of the moisture the crispier your hash browns.

  4. Transfer it to a bowl and the onion powder, pepper, shredded cheese, salt and mix well. Be gentle while you mix.

  5. Heat oil in a pan and drop the hash brown mixture evenly all around the pan.

  6. Using a flat spatula or your hands spread them smooth.

  7. Let cook for 5 minutes, in the meantime drop chunks of butter around the edges of the hash brown.

  8. Now take a plate and cover the pan to help flip the hash brown safe and steady. Be quick yet gentle.

  9. Then slide it back into the pan and let cook for a few minutes.

  10. Now one by one crack the eggs very carefully as to avoid breaking them.

  11. Season with salt and pepper and straight into the oven.

  12. It hardly takes any time for the eggs to get cooked. It'll be ready in less than a minute.

  13. Transfer to a plate and serve HOT. Enjoy!

Recipe Tip-

  • If you don’t have an oven, you can make this on the stove top too. Just cover the pan for a few seconds and your eggs would be ready in no time.

  • Be very gentle when cracking the eggs, one of mine hit hard. It doesn’t matter unless they are cooked well.
